Ratatouille

Like the movie, but simplified. We omitted eggplant to make it a little more kid-freindly, but feel free to add it in if your family prefers! all the ingredients could also be cooked in a skillet on the stovetop if you don't want to turn on the oven.

Ingredients:
1 small green zucchini
1 small yellow summer squash
1 red bell pepper
1 TBSP olive oil
1/2 tsp garlic powder
1/2 tsp Italian seasoning
1 pinch black pepper
1 pinch salt
1 8oz can tomato sauce

Instructions:

  1. Preheat oven to 375 degrees.
  2. Dice zucchini, squash, and bell pepper into 1/2-inch pieces.
  3. Toss together in large bowl with olive oil and seasonings.
  4. Pour tomato sauce into bottom of an 8" non-stick baking dish.
  5. Pour veggies on top of tomato sauce.
  6. Place in oven and bake for 10 minutes. Stir.
  7. Bake for an additional 10 minutes until slightly browned on top.
  8. Great served with pasta!
