Ratatouille
Like the movie, but simplified. We omitted eggplant to make it a little more kid-freindly, but feel free to add it in if your family prefers! all the ingredients could also be cooked in a skillet on the stovetop if you don't want to turn on the oven.

Ingredients:
1 small green zucchini
1 small yellow summer squash
1 red bell pepper
1 TBSP olive oil
1/2 tsp garlic powder
1/2 tsp Italian seasoning
1 pinch black pepper
1 pinch salt
1 8oz can tomato sauce
Instructions:
- Preheat oven to 375 degrees.
- Dice zucchini, squash, and bell pepper into 1/2-inch pieces.
- Toss together in large bowl with olive oil and seasonings.
- Pour tomato sauce into bottom of an 8" non-stick baking dish.
- Pour veggies on top of tomato sauce.
- Place in oven and bake for 10 minutes. Stir.
- Bake for an additional 10 minutes until slightly browned on top.
- Great served with pasta!
