Beet and Carrot Salad with Mint

Makes 4, 1/2 cup servings

Ingredients
2 lbs beets
1 lb carrots
1 stem of mint
1 orange
1 lemon
1/2 tsp salt
2 tbsp olive oil 

Instructions

  1. Wash, peel, and grate the beets and carrots into a medium bowl.
  2. Peel mint leaves from the stem and tear leaves into the size of a ladybug.
  3. Add torn mint to the grated vegetables.
  4. Juice 4 tbsp of orange juice and 3 tbsp of lemon juice into a small bowl. Remove any seeds.
  5. Add salt and olive oil to the juice and whisk until combined.
  6. Pour over the grated vegetables and stir. Let salad sit for 5-10 minutes before serving to let flavors combine. 

 

Beta carotene in carrots is anti-inflammatory, helping to reduce the risk of illness!
