Granola Parfait with Cardamom Berries and Yogurt

Ingredients

Granola
2 cups rolled oats
1 tbsp brown sugar
1 tsp ground cinnamon
1/4 tsp salt
2 tbsp oil
3 tbsp honey or maples syrup
1/2 cup seeds (pumpkin, sunflower, sesame)

Optional
1 cup strawberries
1 tbsp sugar
1 tsp ground cardamom
Plain yogurt

Instructions

  1. Preheat oven to 300F. Line a baking sheet with parchment paper or a silicone baking mat. 
  2. Combine the oats, brown sugar, salt, and cinnamon into a bowl.
  3. Add the oil and honey, then stir the mixture. 
  4. Add the seeds and give the mixture a final stir
  5. Spread the granola mixture on the baking sheet and bake for 18-20 minutes, stirring once halfway through
  6. While the granola is baking, slice the strawberries and add them to the bowl with cardamom and sugar, then mash together gently. Place in the refrigerator with yogurt. 
  7. Once granola is done and cooled, layer a scoop of yogurt, then berries, then top with granola.
