Granola Parfait with Cardamom Berries and Yogurt

Ingredients
Granola
2 cups rolled oats
1 tbsp brown sugar
1 tsp ground cinnamon
1/4 tsp salt
2 tbsp oil
3 tbsp honey or maples syrup
1/2 cup seeds (pumpkin, sunflower, sesame)
Optional
1 cup strawberries
1 tbsp sugar
1 tsp ground cardamom
Plain yogurt
Instructions
- Preheat oven to 300F. Line a baking sheet with parchment paper or a silicone baking mat.
- Combine the oats, brown sugar, salt, and cinnamon into a bowl.
- Add the oil and honey, then stir the mixture.
- Add the seeds and give the mixture a final stir
- Spread the granola mixture on the baking sheet and bake for 18-20 minutes, stirring once halfway through
- While the granola is baking, slice the strawberries and add them to the bowl with cardamom and sugar, then mash together gently. Place in the refrigerator with yogurt.
- Once granola is done and cooled, layer a scoop of yogurt, then berries, then top with granola.
