Ginger Ale

Makes about 4, 1 1/4 cup servings

Ingredients
3 oz fresh ginger, enough to slice into 1/3 cup
2 tbsp sugar
4 limes
4 cups sparkling water

Instructions

  1. Make ginger extract: wash the ginger; it does not need to be peeled. Slice washed ginger into 1/4" coins.
  2. Place into a small saucepan and cover with water. Cook at a rolling boil for about 3 minutes. Let cool slightly.
  3. Pour ginger, water, and 1 cup of fresh water into a blender. Start to blend on a low setting, then increase to high and blend for 2 minutes. Strain liquid into a measuring cup and discard ginger pulp. You should have approximately 1 cup of ginger extract.
  4. Add sugar to the ginger extract and stir to dissolve. 
  5. Juice limes: if limes are hard, massage them on the counter by rolling underneath palms until they soften up a bit- this will help extract more juice. Cut limes in half and juice into a measuring cup to get approximately 1/2 cup of lime juice.
  6. Add lime juice to the ginger extract.
  7. Make ginger ale: Add 1/4 cup ginger extract to 1 cup of sparkling water and enjoy!
  8. There are approximately 1 1/2 tsp or 6 grams of sugar per serving. Compare that to the nutrition facts on a can of soda, fruit juice, or electrolyte drink.
