Tangerine and Mango Salad

4 large salads
Ingredients
1-2 sprigs mint
1 mango
6 tangerines or mandarin oranges
2-3 cardamom pods or 1/2 tsp ground cardamom
1 lime, cut in half
1/4 tsp salt
1 tbsp olive oil
1 head romaine or leaf lettuce
Instructions
- Wash and dry all produce.
- Peel the tangerines. Cut the segments in half and remove any seeds. Add the segments to a large mixing bowl.
- Tear the mint leaves into small pieces and add to the tangerines.
- Pit the mango and dice it into cubes. Add to tangerines.
- Crush the cardamom in a mortar and pestle if using pods. Remove the pod cover and grind seeds. Add ground cardamom to the tangerines.
- For the dressing, juice the lime into a small bowl, add salt and olive oil. Add to tangerines.
- Tear leaf lettuce into 1-inch pieces.
- Place leaf lettuce in serving bowls and top with tangerine mixture.
Leafy greens contain vitamin K, which helps heal cuts and scrapes.
