Tangerine and Mango Salad

4 large salads

Ingredients
1-2 sprigs mint
1 mango
6 tangerines or mandarin oranges
2-3 cardamom pods or 1/2 tsp ground cardamom
1 lime, cut in half
1/4 tsp salt
1 tbsp olive oil
1 head romaine or leaf lettuce

Instructions

  1. Wash and dry all produce.
  2.  Peel the tangerines. Cut the segments in half and remove any seeds. Add the segments to a large mixing bowl. 
  3. Tear the mint leaves into small pieces and add to the tangerines.
  4. Pit the mango and dice it into cubes. Add to tangerines.
  5. Crush the cardamom in a mortar and pestle if using pods. Remove the pod cover and grind seeds. Add ground cardamom to the tangerines.
  6. For the dressing, juice the lime into a small bowl, add salt and olive oil. Add to tangerines.
  7. Tear leaf lettuce into 1-inch pieces.
  8. Place leaf lettuce in serving bowls and top with tangerine mixture.

 

Leafy greens contain vitamin K, which helps heal cuts and scrapes.
