Whole Wheat Apple Cinnamon Pancakes

Makes 12, 4" pancakes

Ingredients
1 cup whole wheat flour
2 tbsp sugar
2 tsp baking powder
1/4 tsp salt, or to taste
2 tsp cinnamon
1 cup milk
2 tbsp vegetable oil
1 egg, beaten
1/2 medium apple, 1/2 inch dice

Instructions

  1. Combine flour, sugar, baking powder, salt, and cinnamon in a large bowl. Make a well in the center, and pour in milk, oil, and egg. Mix until smooth.
  2. Add the diced apples to the batter and fold in gently.
  3. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately ¼ cup per pancake. Cook until bubbles form, and the edges are dry, 1-2 minutes. Flip and cook until browned on the other side. Repeat with the remaining batter.
  4. Serve hot and enjoy!
