Beet Berry Chia Jam

Ingredients
1 cup grated beet
2 cups fresh or frozen berries (blueberries, raspberries, or blackberries work best)
2 tbsp chia seeds
2 tbsp sugar
1/4 cup water

Instructions

  1. Add berries, beets and water to a medium saucepan. Cook over low-medium heat. Stir occasionally as the pot simmers for about 5-7 minutes.
  2. Remove from heat. Add the sugar and stir to dissolve. Let cool slightly. 
  3. The jam can be blended at this point or left "rustic."
  4. Add in chia seeds and stir for about 30 seconds, then let sit for about 5 minutes until the jam is firm
  5. Pour mixture into desired container and let cool completely for about 30 minutes. Seal and store in the fridge for up to 2 weeks. 

 

Nitrates in beets improve oxygen blood flow and energy use during exercise.
