Beet Berry Chia Jam
Ingredients
1 cup grated beet
2 cups fresh or frozen berries (blueberries, raspberries, or blackberries work best)
2 tbsp chia seeds
2 tbsp sugar
1/4 cup water
Instructions
- Add berries, beets and water to a medium saucepan. Cook over low-medium heat. Stir occasionally as the pot simmers for about 5-7 minutes.
- Remove from heat. Add the sugar and stir to dissolve. Let cool slightly.
- The jam can be blended at this point or left "rustic."
- Add in chia seeds and stir for about 30 seconds, then let sit for about 5 minutes until the jam is firm
- Pour mixture into desired container and let cool completely for about 30 minutes. Seal and store in the fridge for up to 2 weeks.
Nitrates in beets improve oxygen blood flow and energy use during exercise.
