A simple salsa that goes well with whole-wheat pasta.
- 1 10-ounce package of frozen corn
- 1 large tomato, diced
- ½ medium red onion, diced
- 1 jalapeno pepper, diced and seeded
- 3 tablespoons balsamic vinegar
- 2 tablespoons fresh chopped basil
- 2 tablespoons chopped cilantro
- ¼ tsp salt substitute
Mix everything in a large bowl. Let sit for an hour to let the flavors diffuse.
