Here’s a great nutritious snack for breakfast or any time of the day. Goes great with banana-based ice cream.

Ingredients

  • 7 cups chopped red apples
  • ½ cup pitted dates (could also use ½ cup raisins)
  • ½ to 1 cup of water
  • 2 teaspoons cinnamon
  • ¼ cup chopped walnuts

Instructions

  1. Preheat oven to 350° F.
  2. Set aside one cup of chopped apples. Place the rest in an 8x8 glass baking dish.
  3. In a blender, combine dates and water. Blend on high until smooth. 
  4. Add 1 cup of apples and cinnamon. Blend on high until smooth. 
  5. Pour this mixture over the apples in the baking dish and mix thoroughly. Bake for 40-50 minutes until golden brown.
  6. Top with crushed walnuts.
